Sweet Chipotle BBQ Sauce
1 Tablespoon grapeseed oil
½ medium onion, diced small
2 large cloves of minced garlic
1 cup ketchup (homemade or your favorite bottled)
1/3 cup coconut sugar
1/3 cup dark molasses
¼ cup minced chipotle peppers in adobo sauce
1 Tablespoon Worcestershire sauce
3 Tablespoons vinegar (apple cider or distilled white)
Salt to taste
Heat the oil in a medium sauce pan over medium-low heat. Add the onion and garlic and sauté for five (5) minutes, stirring often. Do not allow the sauté to burn.
Add the remaining ingredients and simmer on low heat for 20 minutes. The mixture will condense and intensify in flavor. Check the flavor and adjust with any of the ingredients to suit your taste.
Use as is, or if you want a smooth sauce, add to your blender and process for a few seconds.
This sauce is great on ribs (beef and pork) and chicken. It can also make a great sloppy joe sauce. Also mixed into beef or turkey burgers before cooking. Yum!
Notes: You may substitute one of the following when you find yourself completely out of molasses.
1/3 cup honey
1/3 cup maple syrup
2/3 cup honey and maple syrup combined in any ratio
